So, I've decided that if/when I get body armor, I wanted to go with a studded/brig vest with a suede casing. Something like this: I've only looked for like 30 seconds, but haven't been able to find any instruction. I understand the pockets and steel plates and how that would work, it's the riveting them in (which I want, because I love the look) that I can't figure out.

The trick is using rivets that aren't going to tear your fabric apart and/or finding a fabric that's tough enough to resist tearing. If you make the plates out of leather, then the armor won't be as encumbering. You could also make the plates out of 18-20 gauge steel which is not that thick. As far as how to lay out the rivets, you could use a plate template to mark out the holes on the fabric. You need to use an awl, not a punch, because you want the holes in the fabric to go between the gaps in the threads. If you use a punch, then you're actually cutting the fabric and introducing points where it can pull apart and tear.

No chain under it, I must be the exception to the rule for Hydra.
What I actually don't get, is how you would rivet through the metal plate. Like, you punch through leather and then rivet the hole... how do you punch through steel?

actually, if i may offer a solution, cause i know everybody is waiting for my take on this, you should use a vise grips to hold several plates together. then use a drill press to drill through several plates at once. useing a drill press is easier, faster and safer. it also makes sure that your holes go square and straight so it is prefectly aligned with every plate being identicle. I see no reason to not attach a pair of chain sleeves to keep the awesome look.

I'm gonna have a leather arm-cannon for my sword arm, and this will cover my shield arm shoulder, I'd be nearly perectly armored after this.

No, step 4 is starting this project, step 2 being getting the arm cannon from Morph and step 3 being making a new shield.
